This is a delicious and refreshing dish that can be used as a veggie dip, salad topping, or as a condiment with grilled chicken/chicken souvlaki.
You Will Need:
- 2 cups of plain, whole milk Greek yogurt (organic if possible)
- 2 TBSP fresh squeezed lemon juice
- 1 clove of garlic, minced
- 1 English cucumber, peeled and grated
- 1 TBSP of fresh mint or dill, finely chopped
- salt
Directions:
Place grated cucumber in a colander, sprinkle with salt and toss. Let it sit for 15 minutes or so and then squeeze it to remove the excess water. Then mix all ingredients together, with salt to taste, and store covered n the refrigerator for a few hours before serving to let the flavours blend.
