Mashed Sweet Potato ‘Dessert’

This is a yummy mashed sweet potato recipe; so delicious and good for you. It can be used as a side dish or even as a dessert!

What You’ll Need

These amounts make enough for a side-dish for 2 people. Amounts can be adjusted to make more.

  • 1 sweet potato
  • 1 tablespoon coconut oil
  • 1/4 teaspoon cinnamon
  • A sprinkle of natural, unrefined sea salt
  • A handful of shredded, unsweetened coconut
  • Option: some chopped nuts, like pecans

Step 1: Baking

547849_562953957059732_503854590_n[1]Using a fork, poke a bunch of holes into a washed, unpeeled, sweet potato, and then bake in a 350F oven for about 45 minutes (until it’s nice and soft – so it can be easily mashed).

 

Step 2: Mashing & Serving

547568_562953927059735_1307872019_n[1]Peel away the skin (really easy to do after it’s baked), break it up, and put it in a bowl with coconut oil, cinnamon, and a sprinkle of natural, unrefined sea salt. Mash it all up.

733951_562953937059734_54653351_n[1]Top with shredded, unsweetened coconut (optional, but after all, I am the Crazy Coconut Lady). If I had any pecans, I would have broken some up and sprinkled them on top too. This made my taste buds and my tummy very happy! :o)
